We have a single Exchange server and around 50 users. They all keep
multiple PST files and some have as many as 100,000 archived mails
spread across 10 or more PST files. These mails aren't needed for
Compliance.

Now in my dream, there would be a piece of software that would
integrate with Exchange Server and Outlook and provide an Archive
folder in each users inbox. Users could create their own folder
structure inside this archive folder and drag/drop mail into it for
archiving (just like a PST file). This mail would then be stored on an
SQL server and backed-up.

This would remove the need for local PST files and make the system
transparent to the user (instead of using a webpage to search in and
recover from a "flat" archive).

Does this software exist? If so, can anyone recommend a particular
product?

There are lots of archival tools available. Mimosa, Quest Archive Manager,
etc.

Yes the software does exist but stores mail far better than in SQL.
